This study monitored changes in chlorophyll content during the oven-drying of cassava leaves, aiming to preserve leaf greenness by minimizing the reduction in chlorophyll levels. The leaves were subjected to three different temperatures, with or without physical (blanching) and chemical (bicarbonate addition) pretreatments. Regarding the solar drying process, three phases were observed: an initial phase (0-12 h) where levels remained high, characterized by loses of approximately 0,001 across untreated, blanched, and bicarbonate-blanched sun-dried leaves; an intermediate phase (24-48 h) showing marked differences of approximately 0,006; and a late phase (60-90 h) characterized by a decrease 0,002.Downloads
